Savory bacon, bone, and potato soup - a comforting yet nutritious meal.
Ingredients:
  • 1kg bacon bones
  • 1 brown onion, chopped
  • 2 carrots, chopped
  • 2 celery sticks, chopped
  • 3000.00 gm (3 litres) water
  • 1 leek, thinly sliced
  • 2 garlic cloves, crushed
  • 1kg desiree potatoes, peeled, cubed
  • 750ml water
  • 185ml cream
  • Snipped fresh chives, to serve
  • Ground black pepper, to serve
  • Bread, to serve
Instructions:
  • In a large saucepan, combine bacon bones, onion, carrots, celery, and water. Cover the saucepan and bring to a boil. Simmer for 1 1/2-2 hours until the meat easily falls off the bones. Set aside the meat. Strain the stock, discard the vegetables, and shred the cooled meat.
  • In a large saucepan over medium heat, sauté leek and garlic in oil until fragrant, about 8-10 minutes. Add potatoes, water, and 3 cups of stock. Simmer with the lid partially on for 15-20 minutes. Stir in cream and let it simmer uncovered for another 10 minutes.
  • Gently crush the potatoes, then mix in the shredded meat and heat over low flame until warmed. Garnish with fresh chives and pepper and enjoy with crusty bread on the side.
