Irresistible bourbon caramel bacon snack mix with mixed cereals, nuts, and pretzels.
Ingredients:
  • 12 slices bacon, or more to taste
  • 0.5 cup butter
  • 0.5 cup light brown sugar
  • 0.33333334326744 cup light corn syrup
  • 2 tablespoons bourbon
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon chipotle chile powder, or more to taste
  • 2 (10 ounce) cans mixed nuts
  • 4 cups crispy rice cereal squares
  • 4 cups crispy corn cereal squares
  • 3 cups mini pretzels
  • 1 cup oatmeal cereal squares (such as Quaker® Oatmeal Squares), crushed
Instructions:
  • Crisp up the bacon in a large skillet over medium-high heat, ensuring it is evenly browned and very crisp, for about 10 minutes. Drain the bacon on paper towels to remove excess grease.
  • Preheat the oven to 300 degrees F (150 degrees C), then line 1/2-sheet cake pans or large baking pans with overlapping parchment paper.
  • Melt butter in a large heat-proof glass measuring cup in the microwave. Stir in brown sugar, corn syrup, bourbon, and Worcestershire sauce. Microwave the mixture on high for 2 minutes.
  • Stir chipotle powder into the butter mixture until it thickens into a sticky, pale caramel consistency.
  • In a very large mixing bowl, toss together mixed nuts, rice squares, corn cereal, pretzels, oatmeal squares, and crumbled bacon. Pour the caramel-bourbon mixture over the mixture and gently fold in with a large silicone spatula until everything is evenly coated.
  • Spread the snack mix evenly on the baking pans.
  • Bake in the preheated oven for 20-25 minutes until dry and crispy. Flip pieces over halfway through with a silicone spatula. Remove from oven and cool on the pan for at least 30 minutes before serving.
  • Create a pouch with the parchment paper by pulling the edges up and pour the finished mix into a large, clean mixing bowl. Gently break up any clumps. Transfer the snack mix to clean, airtight storage containers or resealable zip-top bags.
