Satisfying German potato dumplings pair perfectly with any meal.
Ingredients:
  • 1.5 pounds russet potatoes
  • 1 tablespoon chopped fresh parsley
  • 0.25 teaspoon freshly ground nutmeg
  • 0.25 cup lard or other cooking fat
Instructions:
  • Boil whole potatoes in their skins for 25 to 30 minutes until tender. Drain and peel once they're cool enough to handle, then place on a lightly floured surface and mash with a rolling pin.
  • Combine mashed potatoes with flour, egg, parsley, salt, and nutmeg in a large bowl. Knead until you have a smooth dough. Roll out the dough to 1/2-inch thickness, then cut into thin strips about 1 1/2 inches long. Gently roll or stretch the strips to taper the ends. Let rest for 15 minutes.
  • Heat the lard in a large skillet over medium heat. Add the potato strips and fry until they turn golden brown on both sides.
