Try a tantalizing twist on stew with beef, carrots, and onions by adding figs, honey, and cinnamon for a uniquely delicious flavor boost inspired by the capital city of Iraq.
Ingredients:
  • 1 pound cubed beef stew meat
  • 1 (17 ounce) can figs, drained (reserve juice) and chopped
  • 1.75 cups water, or as needed
  • 1 cup sliced carrots
  • 0.75 cup sliced onion
  • 6 green onions, chopped
  • 0.5 teaspoon ground coriander
  • 0.25 cup honey
  • 2 tablespoons red wine vinegar
  • 1 cup sliced almonds
Instructions:
  • In a heavy pot, heat oil over medium heat. Cook beef, stirring occasionally, until beautifully browned, this should take approximately 5 minutes.
  • Combine the reserved fig liquid with water in a 2-cup measuring cup. Pour this liquid into the pot with the beef. Stir in carrots, onion, green onions, coriander, and cinnamon. Simmer on low heat for 90 minutes.
  • Mix the honey, vinegar, salt, and pepper into the beef mixture. Simmer on low heat for an additional hour.
  • Combine luscious figs and crunchy almonds into the savory beef mixture. Take off the heat and allow it to cool for 1 hour before reheating for a sensational presentation.
