Try a tantalizing twist on stew with beef, carrots, and onions by adding figs, honey, and cinnamon for a uniquely delicious flavor boost inspired by the capital city of Iraq.
Ingredients:
1poundcubedbeef stew meat
1 (17 ounce) canfigs, drained (reserve juice) and chopped
1.75 cups water, or as needed
1cupslicedcarrots
0.75 cupslicedonion
6green onions, chopped
0.5 teaspoonground coriander
0.25 cuphoney
2tablespoons red wine vinegar
1cupslicedalmonds
Instructions:
In a heavy pot, heat oil over medium heat. Cook beef, stirring occasionally, until beautifully browned, this should take approximately 5 minutes.
Combine the reserved fig liquid with water in a 2-cup measuring cup. Pour this liquid into the pot with the beef. Stir in carrots, onion, green onions, coriander, and cinnamon. Simmer on low heat for 90 minutes.
Mix the honey, vinegar, salt, and pepper into the beef mixture. Simmer on low heat for an additional hour.
Combine luscious figs and crunchy almonds into the savory beef mixture. Take off the heat and allow it to cool for 1 hour before reheating for a sensational presentation.
