Matzo-crusted chicken seasoned with Hungarian paprika for a delicious twist on a family recipe.
Ingredients:
  • 4 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness
  • 3 eggs
  • 2 tablespoons Hungarian paprika, divided
  • 2 tablespoons prepared yellow mustard
  • salt and pepper to taste
  • 2 cups matzo meal
  • 1 cup oil for frying
Instructions:
  • Combine eggs, 1 tablespoon of paprika, mustard, salt, and pepper in a bowl. In another dish, mix the rest of the paprika with matzo meal.
  • In a large skillet over medium-high heat, warm the oil. Coat each chicken breast in eggs and then matzo meal until fully covered, ensuring no chicken is visible. Fry in hot oil for about 5 minutes per side until firm and juices run clear; adjust heat if browning too quickly.
