Baked Blueberry Cheesecake

Blueberry cheesecake with a buttery graham crust and lightly sweet blueberry topping.
Ingredients:
  • 1.5 cups graham cracker crumbs
  • 6 tablespoons butter, melted
  • 3 (8 ounce) packages cream cheese, softened to room temperature
  • 0.75 cup white sugar
  • 3 eggs
  • 2 cups fresh blueberries
  • 0.33333334326744 cup white sugar, or more to taste
  • 2 tablespoons cornstarch, or more to taste
  • 0.5 cup cold water
Instructions:
  • Heat the oven to 325°F (165°C).
  • In a bowl, mix graham cracker crumbs, melted butter, and 1/3 cup sugar. Press the mixture into the bottom of a pie plate.
  • In a large bowl, combine cream cheese and 3/4 cup sugar until fluffy. Incorporate eggs one at a time, mixing thoroughly after each addition. Spread the creamy filling over the crust in the pie plate.
  • Bake in the preheated oven for about 45 minutes, until the center is almost set and slightly jiggly. Let the cheesecake cool completely for about 1 hour.
  • In a saucepan, gently mix blueberries with 1/3 cup sugar over low heat. In a small bowl, dissolve cornstarch in cold water, then add it to the blueberries in the saucepan. Simmer until thickened for about 10 minutes. Drizzle the blueberry sauce over cheesecake just before serving.
