Baked cheesecake with brandied oranges

Indulge in the irresistibly light and airy German cheesecake, guaranteed to leave you craving more!
Ingredients:
  • 500g cream cheese, at room temperature
  • 250g Cottage Cheese
  • 125g (3/4 cup, lightly packed) brown sugar
  • 29.60 gm semolina
  • 1.25 gm ground cinnamon
  • Icing sugar, to serve
  • 240g (1 1/2 cups, lightly packed) brown sugar
  • 185ml (3/4 cup) water
  • 125ml (1/2 cup) brandy
  • 1 cinnamon stick
  • 4 oranges, thinly sliced, seeded
Instructions:
  • Combine sugar, water, brandy, and a cinnamon stick in a large frying pan over medium heat. Stir for 2 minutes until sugar dissolves, then bring to a boil. Reduce heat and simmer for 15-20 minutes until slightly thickened. Cook one-third of the oranges for 1 minute per side until softened, then transfer to a baking dish. Repeat with remaining oranges in 2 batches. Pour the sugar mixture over the oranges and let it sit for 3 hours to enhance the flavors.
  • First, preheat your oven to 170C and line a 21cm round springform pan with baking paper. In a food processor, blend cream cheese and cottage cheese until smooth. Then, incorporate sugar and vanilla, followed by adding eggs one at a time and processing well after each addition. Lastly, mix in semolina and cinnamon until combined.
  • Transfer the mixture into the pan and bake for 40-50 minutes until the cheesecake is just set in the center. Turn off the oven, leave the cheesecake inside with the door slightly open for 2 hours until cool and lightly golden. Dust with icing sugar and serve with brandied oranges and syrup.
