Whip up these speedy chicken empanadas with rotisserie chicken and salsa for a delicious meal in no time.
Ingredients:
  • 12 empanada pastry discs (such as Goya® Tapas para Empanadas)
  • 1 cup diced cooked chicken
  • 0.5 (8 ounce) package Neufchatel cheese, softened
  • 0.25 cup medium salsa (such as Pace®)
  • 0.5 teaspoon salt, or to taste
  • 1.5 tablespoons heavy whipping cream
Instructions:
  • Preheat your oven to 375°F (190°C) and prepare a baking sheet by lining it with parchment paper.
  • In a saucepan over medium heat, melt Neufchatel cheese with salsa and chicken until smooth, about 3 to 5 minutes. Add salt, stir thoroughly, and enjoy!
  • Place a generous tablespoon of savory chicken filling onto each empanada disc. Seal the tasty pockets by folding the dough over the filling, moistening the edges with water, and pressing together firmly using a fork. Lay the empanadas on a baking sheet and brush them with rich heavy whipping cream.
  • Bake until beautifully golden for 20-25 minutes in the preheated oven.
