Baked chicken with sage and prosciutto recipe

Ingredients:
  • 4 Australian Chicken Breast Fillets
  • 12 sage leaves
  • 8 slices prosciutto
  • 9.20 gm olive oil
  • 1 red onion, cut into wedges
  • 1 garlic clove, thinly sliced
  • 400g can cherry tomatoes
  • 125ml chicken stock
  • 60g olive
  • 62.50 ml rosemary sprigs
Instructions:
  • Preheat your oven to 200°C. Place a piece of chicken on a clean work surface and top it with 3 aromatic sage leaves.
  • Wrap each chicken breast with 2 slices of savory prosciutto, layering with fresh sage leaves as you go. Repeat this process with the remaining chicken, sage leaves, and prosciutto slices.
  • In a large frying pan over medium-high heat, sizzle the chicken in hot oil for 2 minutes per side until beautifully golden. Then, place the chicken into a spacious baking dish.
  • Sauté onion and garlic in the pan until lightly golden. Pour in tomatoes and stock, bring to a simmer, then remove from heat. Spoon the tomato sauce around the chicken in the dish, top with olives and rosemary, and season to taste.
  • Roast in the oven for 15 minutes, or until the chicken is fully cooked and the sauce has slightly thickened.
