Overnight coconut French toast: prep ahead, bake in 30 mins. Perfect weekend treat!
Ingredients:
  • cooking spray
  • 16 (1 inch thick) slices French bread, cut diagonally
  • 1.25 cups light coconut milk
  • 1.25 cups egg substitute
  • 0.5 cup white sugar
  • 1 tablespoon vanilla extract
  • 0.5 cup sweetened flaked coconut
Instructions:
  • Coat a 9x13-inch baking dish with cooking spray.
  • Place the bread slices in an even layer in the prepared baking dish.
  • In a bowl, vigorously blend coconut milk, egg substitute, sugar, and vanilla extract until well mixed. Pour the mixture over the bread, ensuring it is fully soaked. Cover the baking dish with plastic wrap and refrigerate for 8 hours or overnight.
  • Preheat the oven to 350 degrees F (175 degrees C) and unwrap the baking dish.
  • Flip the bread slices and generously sprinkle coconut on top. Allow it to sit for 15 minutes.
  • Bake until the egg is fully set and the coconut turns golden, approximately 30 minutes in the preheated oven.
