Trendy TikTok pasta: Baked feta with cherry tomatoes, bell peppers, and onion.
Ingredients:
  • 2 pints cherry tomatoes
  • 0.5 cup sliced red bell pepper
  • 0.5 cup sliced red onion
  • 4 cloves peeled garlic, or more to taste
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 0.5 teaspoon red pepper flakes
  • 0.5 teaspoon freshly ground black pepper
  • 0.5 teaspoon Italian seasoning
  • 0.5 teaspoon dried basil
  • 0.25 teaspoon sea salt
  • 1 (8 ounce) package Cheese, feta
  • 1 (12 ounce) package penne pasta
  • 1 cup baby spinach
Instructions:
  • Preheat your oven to 400°F (200°C).
  • In a 13x9-inch baking dish, mix together cherry tomatoes, bell pepper, onion, olive oil, garlic, lemon juice, lemon zest, red pepper flakes, black pepper, Italian seasoning, basil, and sea salt.
  • Create an opening in the center of the pan and gently place the whole block of feta cheese. Carefully turn the cheese in the oil, ensuring it stays whole and gets fully coated.
  • Roast in the hot oven until the cherry tomatoes blister and split, for about 40 to 45 minutes.
  • While you wait, boil a large pot of lightly salted water. Cook penne in the boiling water, stirring occasionally, until tender but still firm, for about 11 minutes. Drain the pasta and save about 1 cup of the pasta water.
  • Take the feta-tomato mixture out of the oven. Mash garlic, tomatoes, onions, and peppers with a heavy spoon, then combine with the feta cheese to make a delicious sauce. Stir in spinach and cooked pasta. The spinach will wilt from the heat of the pasta and sauce. Add pasta water gradually if necessary, until you achieve the desired consistency. Mix everything together thoroughly and serve.
