Family-friendly baked fish and chips with creamy tartare sauce.
Ingredients:
  • 62.50 ml plain flour
  • 130.00 gm buttermilk
  • 187.50 ml dried breadcrumbs
  • 20.00 ml finely chopped fresh flat-leaf parsley leaves
  • 2 tsp lemon pepper
  • 650g thick white fish fillets, cut into 2cm wide strips
  • olive oil cooking spray
  • 4 large sebago potatoes, peeled, cut into chips
  • 247.50 gm reduced-fat mayonnaise
  • 2 gherkins, finely chopped
  • 62.50 ml finely chopped fresh flat-leaf parsley leaves
  • 40.00 ml capers, rinsed, finely chopped
  • 10.60 gm lemon juice
Instructions:
  • Preheat your oven to 220°C/200°C fan-forced and line 2 large baking trays with parchment paper.
  • First, create a flour bed on a plate. Next, pour the tangy buttermilk into a shallow bowl. Lastly, mix together breadcrumbs, fresh parsley, and zesty lemon pepper on a plate.
  • For each piece of fish, dust with flour, dip in creamy buttermilk, cover in a crispy breadcrumb blend, and lay on a baking sheet. Repeat these steps for all remaining pieces of fish, flour, buttermilk, and breadcrumb mix. Finish by giving the fish a light spray of oil before baking.
  • Add chips to an oven bag or shallow, heatproof, microwave-safe dish. Pour in 2 tablespoons of cold water. Securely close the bag or cover the dish. Microwave on HIGH for 4 to 5 minutes until chips are tender. Drain the chips and place them on a tray. Spray with oil and season with salt and pepper.
  • First, bake the chips on the top shelf of the oven for 10 to 15 minutes until golden and crisp. Then, place the fish in the oven underneath the chips and bake for an additional 10 to 12 minutes or until the fish is cooked through.
  • Prepare the tartare sauce by mixing mayonnaise, chopped gherkins, fresh parsley, capers, and zesty lemon juice in a bowl. Season generously with salt and pepper.
  • Present the fish and chips accompanied by a generous dollop of tangy tartare sauce for the perfect flavor pairing.
