Festive baked cheesecake with Coles Fruit Cake base - a Christmas crowd favorite!
Ingredients:
  • 800g Iced Fruit Cake*, icing removed
  • 20.00 ml dark rum or orange juice
  • 750g cream cheese, softened
  • 220g caster sugar
  • 3 tsp finely grated orange rind
  • 60ml orange juice
  • 2.50 gm mixed spice
  • 3 Free Range Eggs
  • 250g sour cream
  • 125ml orange juice
  • 110g caster sugar
  • Mixed berries, to serve
Instructions:
  • Preheat your oven to 180°C and line the base of a 22cm springform pan with baking paper.
  • Slice the cake into twelve 1cm-thick slices. Arrange the cake slices in the lined pan, trimming as needed to fit. Brush the cake base with your choice of rum or orange juice for added flavor.
  • In a bowl, blend the cream cheese, sugar, and orange rind using an electric mixer until smooth. Mix in orange juice and mixed spice until combined. Incorporate eggs until smooth, then add sour cream and mix until just combined. Pour the mixture over the cake base in the pan.
  • Set the pan on a baking tray and bake the cheesecake for 1 hour until it's just set. Turn off the oven, prop the door open, and let the cheesecake cool inside for 2 hours. Then, chill the cheesecake in the fridge for 3 hours.
  • In a small saucepan over low heat, mix the additional orange juice and sugar. Stir continuously for 5 minutes until the sugar dissolves. Increase heat to medium and let it come to a gentle boil, cooking for 3 more minutes until the syrup thickens. Allow it to cool.
  • Place the berries on top of the cheesecake and generously drizzle with the orange syrup.
