Elegant beet and goat cheese dip served with assorted chips - perfect for entertaining.
Ingredients:
  • 0.75 pound beets - trimmed, peeled and cut into 1/2-inch cubes
  • 2 tablespoons olive oil
  • 0.125 teaspoon pepper
  • 1 (8 ounce) package goat cheese, softened
  • 1 (4 ounce) package cream cheese, softened
  • 2 teaspoons fresh thyme
  • 1 clove garlic, minced
  • 1 teaspoon lemon juice
  • 1 tablespoon coarsely crushed pine nuts
  • 1 tablespoon balsamic glaze
Instructions:
  • Preheat the oven to a toasty 425 degrees F (220 degrees C) and elegantly line a roasting pan with glistening aluminum foil.
  • In a bowl, gently coat beets with olive oil and season generously with salt and pepper. Transfer to the roasting pan.
  • Roast the beets in the preheated oven for 20 minutes until soft, stirring halfway through. Then, remove from oven and wrap them in foil to keep warm. Finally, reduce the oven temperature to 400 degrees F (200 degrees C).
  • In a mini food processor, blend goat cheese, cream cheese, thyme, garlic, and lemon juice until smooth. Transfer the mixture to a small oven-proof dish.
  • 1. Bake in a preheated oven until hot and lightly browned for about 15 to 17 minutes. 2. Make a well in the center of the cheese mixture and arrange beets on top. 3. Sprinkle with pine nuts and drizzle with balsamic glaze. 4. Serve warm.
