Crispy potatoes complement juicy lamb for a mouthwatering dish.
Instructions:
  • Preheat the oven to 200°C. Mix flour, salt, and pepper in a bowl. Coat the chops with the seasoned flour and place them on a plate.
  • In a non-stick frying pan, heat oil over medium heat. Brown chops in batches of 3 for 2 to 3 minutes per side. Place in an ovenproof dish.
  • Sprinkle 1 tablespoon of the seasoned flour into the frying pan. Cook over medium heat, stirring, until it bubbles, about 1 minute. Slowly pour in water while stirring constantly until it boils. Add rosemary and lemon slices, then pour the sauce over the lamb chops.
  • Arrange thinly sliced potatoes in a slight overlap over the lamb. Lightly spray with oil and season generously with salt and pepper. Bake for 1 hour, or until the potatoes are golden and crisp. Garnish with fresh rosemary sprigs and serve.
