Delicious baked lemon chicken with spring greens - a perfect dinner choice!
Ingredients:
  • 2 lemons
  • 60ml honey
  • 2 bunches asparagus, woody ends trimmed
  • 1 bunch baby broccoli, halved lengthways
  • 2 Australian Chicken Breast Fillets, halved horizontally
Instructions:
  • Preheat the oven to 200°C. Grate the zest and squeeze the juice of 1 lemon. Slice the remaining lemon thinly.
  • In a small bowl, mix the lemon juice and honey, season with salt and pepper. Spread the asparagus and baby broccoli in a large roasting pan in a single layer.
  • Preheat a chargrill on high heat. Spray the chicken with olive oil, season it, and grill for 2 minutes on each side until golden brown. Serve the chicken over the asparagus mixture in the pan.
  • Grill the lemon slices for 30 seconds per side, or until lightly charred, then place them over the chicken in the pan.
  • Pour the lemon juice mixture into a small saucepan and bring it to a boil. Then, remove it from the heat and drizzle it over the chicken. Bake until the chicken is cooked through and the asparagus and baby broccoli are tender, about 5 minutes. Garnish with lemon zest before serving.
