Baked Mushroom Rice

Savory mushroom rice with herbs, versatile as a main or side dish.
Ingredients:
  • 2 cups uncooked white rice
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 cup vegetable broth
  • 0.5 cup chopped onion
  • 0.25 cup fresh chopped mushrooms
  • 1 teaspoon dried parsley
  • 0.25 cup butter, melted
Instructions:
  • Preheat oven to 400°F (200°C).
  • Combine white rice, cream of mushroom soup, and vegetable broth in a large bowl. Mix in onion, mushrooms, parsley, oregano, melted butter, salt, and pepper. Transfer to a 2 quart baking dish and cover.
  • Bake in a preheated oven for 35 to 40 minutes. If the rice appears dry before becoming tender, add a splash of water and keep cooking until rice is tender.
