Baked potato shepherd’s pies recipe

Elevate dinner with a twist: shepherd's pie stuffed jacket potatoes! A crowd-pleaser using lamb mince (or swap for beef), paired with garlicky buttered cabbage for a flavorful side dish. Don't overcook the cabbage - just wilt it to perfection.
Ingredients:
  • 4 (250-300g each) sebago (brushed) potatoes, unpeeled, scrubbed
  • 36.80 gm vegetable oil
  • 1 small brown onion, finely chopped
  • 300g lamb mince
  • 40.00 ml gravy powder
  • 225g (11⁄2 cups) frozen peas, carrots, corn mix
  • 80ml (1⁄3 cup) milk, warmed
  • 60g butter
  • 240g (3 cups) coarsely shredded cabbage
Instructions:
  • Preheat your oven to 200°C/180°C fan forced and lightly grease a baking tray with oil.
  • Pierce potatoes all over with a fork, then microwave on High for 12-15 minutes until tender. Let cool slightly before moving on.
  • Heat half of the oil in a large deep frying pan over medium heat. Cook the onion until softened, for about 5 minutes, stirring occasionally. Then add the lamb and cook until browned, breaking up any lumps with a wooden spoon for about 5 minutes.
  • Combine the gravy powder and 185ml (3⁄4 cup) water in a pan and bring to a simmer. Allow it to cook for 5 minutes or until slightly thickened. Stir in the frozen vegetables and cook for an additional 3 minutes. Season to taste and set aside to cool slightly.
  • Slice each potato in half lengthwise and carefully scoop out the flesh using a teaspoon, leaving a 1cm-thick shell. Place the potato insides in a bowl, add milk, 40g butter, season, and mash until smooth.
  • Stuff the potato skins with the lamb mixture and top them with the mash mixture, saving any extra mash. Put them on a baking tray and brush the skins with the leftover oil. Bake for 20 minutes, or until heated through and golden on top.
  • As the potatoes simmer, melt the rest of the butter in a saucepan over medium heat. Add the cabbage and garlic, cook together for 3 minutes until tender. Season to taste.
  • Plate the baked potatoes alongside the buttered cabbage and reserved mash.
