Baked pumpkin risotto

Ingredients:
  • 500g pumpkin, cubed into 2 1/2 cm pieces
  • 400.00 gm arborio rice
  • 4-1530.00 gm chicken style liquid stock, to cover
  • 80g baby spinach leaves
  • 60g butter, in knobs
  • 200g mushrooms, sliced
  • 100g feta, crumbled
  • 125.00 ml parmesan cheese
Instructions:
  • Preheat your oven to 180 degrees Celsius.
  • Place all ingredients in a oven-safe dish and cover with a lid or tightly fitting foil.
  • Bake for 70 minutes, then remove from the oven and serve!
