Savory baked rice with mushrooms, leeks, and bok choy - a versatile and delicious side dish.
Ingredients:
  • 2 tablespoons extra-virgin olive oil
  • 1 cup chopped leeks
  • 6 ounces baby bella (crimini) or white mushrooms, sliced
  • 1.25 cups uncooked long grain white rice
  • 0.25 cup dry white wine
  • 3 cups Swanson® Chicken Broth
  • 3 cups chopped bok choy
Instructions:
  • Preheat your oven to 400°F (200°C).
  • In a large oven-proof skillet over medium-high heat, sauté leeks until slightly softened for about 3 minutes. Add mushrooms and cook for an additional 3 to 5 minutes. Stir in rice until well coated with oil.
  • Drizzle in the wine and simmer over medium heat until rice soaks up nearly all the liquid, approximately 1 minute. Stir in Swanson® Chicken Broth and bring to a boil. Cover the skillet and place it in the oven.
  • Bake for 10 minutes. Gently fold in bok choy. Bake until rice absorbs all liquid, around 10 minutes more. Take the skillet out of the oven, stir, cover, and let it sit for 10 minutes before serving.
