Gourmet baked ricotta elevates any cheese platter.
Ingredients:
  • Olive oil, to grease
  • 500g fresh ricotta
  • 2 eggs, lightly whisked
  • 125.00 ml finely chopped fresh chives
  • 1 tsp chilli flakes
  • Salt & freshly ground black pepper
  • Crusty baguette slices, to serve
Instructions:
  • Preheat your oven to 180°C and lightly grease two 250ml (1-cup) ramekins with oil.
  • In a bowl, mix ricotta, egg, chives, and chili. Season with salt and pepper. Distribute ricotta mixture into ramekins, smoothing the top. Transfer onto a baking tray and bake for 30 minutes until golden and firm. Let it cool for 30 minutes, then invert onto a cheese board. Enjoy with toasted baguette slices.
