Indulgent baked ricotta: creamy, satisfying, and guilt-free.
Ingredients:
  • 500g tub smooth ricotta cheese
  • 82.50 ml finely grated parmesan cheese
  • 2 tsp fresh thyme leaves
  • 1/2 tsp chilli flakes
  • Olive oil cooking spray
  • Crackers, to serve
Instructions:
  • 1. Preheat the oven to 200°C/180°C fan-forced. 2. Mix ricotta, egg, parmesan, half of the thyme, and half of the chilli in a bowl, then season with salt and pepper. 3. Divide the mixture into two, 1 1/2 cup-capacity dishes. 4. Sprinkle the remaining thyme and chilli on top, then spray with oil. 5. Bake for 25 minutes until golden and set. 6. Serve with crackers.
