Baked saffron rice

Ingredients:
  • 2 red onions
  • 2 small pinches of saffron
  • 4 heaped tablespoons natural yoghurt
  • 4 tablespoons sun-dried tomato paste
  • 300 g white basmati rice
Instructions:
  • Preheat the oven to 200ºC/400ºF/gas 6. Finely chop the red onions. Heat olive oil in a roasting tray on high heat, add onions, and fry for 4 minutes until soft and sweet. In a bowl, mix half of the saffron with boiling water. Combine the rest of the saffron with yogurt. Stir tomato paste, rice, salt, and pepper into the onion tray. Pour in saffron water and bring to a boil. Transfer to the oven for 15 minutes until rice is fluffy and golden. Top with saffron yogurt, extra virgin olive oil, mix, and serve.
