Elevate your Sunday roast with crispy baked vegetables.
Ingredients:
  • 2 yellow capsicums, cut into 3cm pieces
  • 2 red capsicums, cut into 3cm pieces
  • 450g (about 1-2) golden nugget pumpkin, seeds removed, cut into 3cm pieces
  • 2 red onions, skin on, cut into wedges
  • 2 brown onions, skin on, cut into 5mm-thick slices
  • 1 large kumara, peeled, cut into wedges
  • 113.75 gm extra-virgin olive oil
  • 6 thyme sprigs
Instructions:
  • Preheat your oven to 190C and generously grease two large baking trays.
  • Spread the vegetables out on the trays. Combine olive oil, garlic, and leaves from three sprigs of thyme in a small bowl.
  • Pour the flavorful drizzle over the vegetables, generously season with salt and pepper, and sprinkle with the remaining fragrant thyme sprigs.
  • Roast the vegetables in the oven for 40 minutes until they are tender and golden brown. Enjoy hot or at room temperature.
