Indulge in a delicious Middle Eastern baklava with flaky filo pastry, golden honey, and pistachios.
Ingredients:
  • 300g Brand natural Californian walnuts
  • 250g pistachios
  • 53.75 gm caster sugar
  • 2.50 gm ground cinnamon
  • 180g butter, melted
  • 1 packet fresh filo Pastry
  • 300g honey
  • 161.25 gm caster sugar
  • 1 cinnamon stick, broken
  • 1 orange, pared rind
Instructions:
  • In a saucepan, combine honey, sugar, cinnamon, orange rind, and 1 cup of water. Simmer over medium heat for 5 minutes until thickened into a syrup. Strain to remove solids, then chill in the refrigerator until cold.
  • Combine walnuts, pistachios, sugar, and ground cinnamon in a food processor and pulse until finely chopped.
  • Preheat the oven to 180C (160C fan). Lightly grease a 35cm x 25cm baking dish with butter.
  • Layer 6 sheets of filo in the dish, brushing each with butter. Sprinkle a third of the nut mixture. Add 2 filo sheets, brush with butter, and repeat twice. Top with remaining filo sheets brushed with butter. Refrigerate for 15 minutes.
  • Cut the baklava into 21 pieces. Bake for 40-50 minutes until crispy and golden. Drizzle hot baklava with sweet honey syrup. Let it cool completely. Enjoy at room temperature.
