Savor the vibrant kale and sweet strawberries in a tangy balsamic dressing.
Ingredients:
  • 2 slices whole grain bread, cut into 1/2-inch squares
  • Cooking spray
  • 1/4 cup balsamic vinegar
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1/4 teaspoon pepper
  • 1 tablespoon olive oil
  • 1 bunch (8 oz) fresh kale, ribs removed, cut into bite-size pieces (6 cups)
  • 1/2 shallot, thinly sliced
  • 2 cups sliced fresh strawberries
  • 1/4 cup shredded Parmesan cheese
Instructions:
  • Preheat the oven to 400°F. Line a cookie sheet with parchment paper. Arrange bread pieces on the sheet and spray with cooking spray. Bake for 8 to 12 minutes, flipping halfway, until golden and crispy. Allow to cool before using as croutons.
  • In a large mixing bowl, whisk together vinegar, mustard, honey, and pepper. Gradually beat in olive oil until smooth. Add kale and shallot, tossing until kale is coated. Gently fold in strawberries. Divide mixture among 4 plates, then sprinkle with croutons and Parmesan cheese. Enjoy straight away.
