Elevate your day with a vibrant lamb and risoni salad, bursting with colorful and delightful flavors.
Ingredients:
  • 200g (1 cup) risoni
  • 2 medium tomatoes, halved, each half cut into 4 wedges
  • 1 small red onion, halved, chopped
  • 1 x 170g jar artichokes (Rosa brand), drained
  • 40g baby rocket leaves
  • 80g (1/2 cup) kalamata olives, pitted
  • 450g lean lamb fillets
  • 60ml (1/4 cups) balsamic vinegar
  • 80g Danish feta, crumbled
Instructions:
  • Prepare the risoni as directed on the package until al dente (about 8 minutes). Drain the risoni and toss it in a bowl with tomatoes, onion, artichokes, rocket, and olives.
  • In a bowl, mix together lamb, vinegar, garlic, and sugar. Let it marinate for 10 minutes.
  • In a hot frying pan, sear the lamb for 4-5 minutes on each side until it reaches your desired doneness. Let it rest on a plate, loosely covered with foil, for 3 minutes before slicing diagonally into thick pieces.
  • Plate the salad, then generously layer the succulent lamb and tangy feta on top for an exquisite presentation.
