Elegant banana cakes topped with tangy passionfruit frosting - perfect for any upscale occasion.
Ingredients:
  • 125g butter, softened
  • 255g brown sugar
  • 2.50 gm ground cinnamon
  • 4.40 gm vanilla extract
  • 2 eggs, at room temperature
  • 150g self-raising flour
  • 75g plain flour
  • 1.25 gm bicarbonate of soda
  • 390.00 gm (about 3 large) over-ripe mashed banana
  • 125ml buttermilk
  • 125g cream cheese, softened
  • 40g butter, softened
  • 150g icing sugar mixture
  • 40.00 ml passionfruit pulp
Instructions:
  • Preheat your oven to 180°C, then generously grease ten 1-cup (250ml) cake or muffin pans.
  • In a bowl, with an electric mixer, cream together butter, sugar, cinnamon, and vanilla until pale and creamy. Add eggs one at a time, beating well after each addition. In a separate bowl, mix together the flours. Gradually add the flours, bicarbonate of soda, banana, and buttermilk to the butter mixture, stirring until just combined after each addition.
  • Evenly distribute the mixture into the prepared pans and smooth the top using the back of a spoon. Bake in a preheated oven for 20-25 minutes or until a skewer inserted in the centers comes out clean. Allow to cool in pans for 5 minutes before transferring onto a wire rack to cool completely.
  • For the passionfruit cream-cheese icing, use an electric mixer to blend the cream cheese and butter until smooth and creamy. Slowly add the icing sugar in batches, making sure to mix well after each addition. Lastly, mix in the passionfruit pulp until fully combined.
  • Spread the icing over the top of each cake using a round-bladed or pallet knife. Enjoy the cakes fresh or store them in an airtight container for up to three days.
