Banana coconut muffins, a perfect on-the-go treat for lunchboxes.
Ingredients:
  • 1 cup white sugar
  • 4 very ripe bananas, mashed
  • 1 cup shredded coconut
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and line 16 muffin cups with paper liners.
  • In a bowl, whisk together sugar, olive oil, egg, and vanilla extract until light and creamy. Add bananas and coconut, then stir well. Combine flour, baking soda, cinnamon, nutmeg, and salt into the banana mixture until smooth. Finally, spoon the batter into muffin cups.
  • Bake in the preheated oven for 30-40 minutes until a toothpick inserted in the center of a cupcake comes out clean.
