Banana macadamia dumplings in toffee sauce

Indulge in a cozy treat of banana macadamia dessert with sticky toffee drizzle.
Ingredients:
  • 225g self-raising flour
  • 5.00 gm cinnamon
  • 60.00g butter, chopped
  • 40g macadamia
  • 10.00 gm caster sugar
  • 140g banana
  • 125ml milk
  • Cream, to serve
  • 500ml water
  • 200g brown sugar
Instructions:
  • In a medium heavy-based pan (20cm wide), combine all the toffee sauce ingredients. Stir over medium heat until the sugar is dissolved. Bring to a boil without stirring. Reduce heat to medium and let it simmer for 10-15 minutes until slightly thickened.
  • In a bowl, mix the flour and cinnamon, then rub in the butter using your fingertips. Add the nuts, sugar, banana, and milk, and stir until combined. Spoon tablespoons of the mixture into the simmering toffee sauce. Cover and simmer for 15 minutes or until the dumplings are cooked, turning if needed.
  • Top the dumplings with a dollop of fresh cream and a drizzle of sauce, to your liking.
