Irresistibly moist banana cookies perfect for freezing and using up ripe bananas.
Ingredients:
  • 1.5 cups all-purpose flour
  • 1 cup white sugar
  • 0.5 teaspoon baking soda
  • 1 teaspoon salt
  • 0.25 teaspoon ground nutmeg
  • 0.75 teaspoon ground cinnamon
  • 0.75 cup shortening
  • 1 egg, beaten
  • 1 cup mashed ripe bananas
  • 1.75 cups rolled oats
  • 0.5 cup chopped walnuts
Instructions:
  • Preheat the oven to 400°F (200°C) to create the perfect cooking environment.
  • Combine flour, sugar, baking soda, salt, cinnamon, and nutmeg in a large bowl. Add shortening and incorporate until smooth. Mix in the egg and bananas until well combined. Stir in oats and walnuts. Drop spoonfuls onto ungreased cookie sheets, 2 inches apart.
  • Bake in the preheated oven for 12 to 15 minutes until the edges are golden brown, then promptly transfer to wire racks to cool.
