Delicious banana bread with crunchy macadamia nuts.
Ingredients:
  • 0.5 cup butter, at room temperature
  • 0.5 cup white sugar
  • 2 eggs, at room temperature
  • 2.5 cups pureed ripe bananas
  • 1.25 teaspoons baking soda
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon kosher salt
  • 2 cups all-purpose flour
  • 0.5 cup coarsely chopped macadamia nuts
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C and grease a 9x5 inch loaf pan.
  • Cream together the butter and sugar in a mixing bowl using an electric mixer until well blended. Add eggs one at a time, then mix in bananas, baking soda, baking powder, salt, and vanilla extract. Gently fold in the flour by hand until just combined, then stir in macadamia nuts.
  • Pour the batter into the pan and bake on the center rack of the oven for 60 to 65 minutes, or until a toothpick inserted in the center comes out clean.
  • Take the loaf out of the oven and allow it to rest for 10 minutes before gently removing it from the pan.
