Barb's Pumpkin Chocolate Chip Muffins

Festive holiday muffins.
Ingredients:
  • 3.33 cups all-purpose flour
  • 2 teaspoons baking soda
  • 3 cups white sugar
  • 1 teaspoon ground nutmeg
  • 2 cups canned pumpkin puree
  • 4 eggs, beaten
  • 0.67 cup water
  • 1 cup semisweet chocolate chips
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and prepare a 24-cup muffin tin by greasing it or lining it with paper liners.
  • Combine flour, baking soda, sugar, salt, and nutmeg in a large bowl. In another bowl, mix pumpkin, eggs, and water until smooth. Gradually incorporate pumpkin mixture into the flour mixture until fully combined. Gently fold in chocolate chips.
  • Bake in a preheated oven for 30 minutes or until a toothpick inserted into the center of a muffin comes out clean.
