Tender shredded beef cooked in spicy barbacoa sauce, effortlessly done in a slow cooker. Perfect for mouthwatering tacos!
Ingredients:
  • 1 (3 pound) beef chuck roast, cut into 6 to 8 chunks
  • salt and ground black pepper to taste
  • 2 tablespoons vegetable oil
  • 0.5 cup beef broth
  • 0.25 cup apple cider vinegar
  • 0.25 cup fresh lime juice
  • 4 chipotle peppers in adobo sauce, chopped
  • 5 cloves garlic, chopped
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 0.25 teaspoon ground cloves
  • 3 large bay leaves
Instructions:
  • Season all sides of the beef chunks generously with salt and pepper.
  • In a large skillet, heat oil over medium-high heat. Brown beef in batches by cooking and stirring for 4 to 5 minutes each. Transfer the beef to a slow cooker.
  • Combine the broth, vinegar, lime juice, chipotle peppers, garlic, cumin, oregano, and cloves in a bowl, ensuring they are well combined. Season the mixture with salt and pepper, then pour it over the beef in the slow cooker. Stir in the bay leaves.
  • Slow-cook until beef is melt-in-your-mouth tender for 8 to 10 hours. Remove bay leaves, then shred the beef using two forks.
  • Add the beef back to the fragrant slow cooker sauce and mix well to ensure every delicious bite is fully coated. Allow the flavors to meld together beautifully as the beef marinates for a minimum of 10 minutes before it's time to indulge.
