Turn leftover bread into flavorful fish patties with this creative recipe.
Ingredients:
  • 600g white fish fillets (we used flathead)
  • 62.50 ml flat-leaf parsley leaves
  • 62.50 ml pine nuts
  • 1 small brown onion, grated
  • 187.50 ml fresh wholegrain breadcrumbs (see note)
  • 125.00 ml grated parmesan cheese
  • 40.00 ml baby capers, drained
  • Olive oil cooking spray
  • 150g bag mixed salad leaves
  • Tomato chutney or relish, to serve
Instructions:
  • Preheat barbecue plate to medium heat. Pulse fish in a food processor until roughly chopped. Add parsley and pine nuts, process until combined.
  • In a large bowl, combine the fish mixture with onion, breadcrumbs, parmesan, egg, capers, salt, and pepper. Mix well.
  • Shape the fish mixture into 12 patties, each using 1/4 cup of the mixture. Spray both sides of the fish patties with oil. Grill on the barbecue for 3 to 4 minutes per side or until fully cooked. Enjoy with salad leaves and tomato chutney.
