Barbecued mint lamb chops with charred corn and chilli slaw

Delicious BBQ mint lamb chops with charred corn and chili slaw ready in 30 minutes for a quick and easy dinner.
Ingredients:
  • 4 (160g each) lamb forequarter chops
  • 80ml jelly
  • 4 corn cobs, husks removed, halved
  • 250g pkt Brand coleslaw mix
  • 1 celery stick, thinly sliced
  • 1 long red chilli, cut into thin strips
  • 60ml coleslaw dressing
  • Mint leaves, to serve
Instructions:
  • Preheat a barbecue grill or chargrill to medium-high heat. Grill lamb, brushing with mint jelly, for 4 minutes on each side or until cooked to your preferences. Rest the lamb, tented with foil, for 5 minutes. Season with salt and pepper.
  • Grill corn cobs, turning occasionally, for 7 minutes until nicely charred.
  • In a large bowl, mix together coleslaw, celery, chili, and dressing.
  • Plate the succulent lamb alongside fresh corn and tangy coleslaw, then garnish with fragrant mint leaves on top.
