Elevate your pizza game with a homemade, healthier vegetarian twist on a classic favorite.
Ingredients:
  • Olive oil cooking spray
  • 2 large red capsicums, cut into thin strips
  • 1 large eggplant, trimmed, cut into 5mm-thick slices
  • 2 zucchini, trimmed, sliced lengthways
  • 2 large pizza bases
  • 165.00 ml 97% fat-free pumpkin hummus (see note)
  • 3 roma tomatoes, sliced lengthways
  • 120g fresh low-fat ricotta
  • 80g rocket leaves
Instructions:
  • Heat the barbecue plate on high until hot. Gently coat capsicum, eggplant, and zucchini with oil. Barbecue the vegetables for about 3-4 minutes per side until tender.
  • Preheat your oven to 220°C. Place the pizza bases on 2 baking trays. Spread 1/3 cup of hummus on each base. Add barbecued vegetables and tomatoes, then crumble ricotta on top. Bake for 10-15 minutes until the bases are crisp. Transfer to a board, top with fresh rocket, season with pepper, and enjoy!
