Barley and Mushrooms with Beans

Nourishing dish packed with grains, legumes, and veggies!
Ingredients:
  • 1 teaspoon olive oil
  • 3 cups sliced fresh mushrooms
  • 1 cup chopped onion
  • 0.5 cup chopped celery
  • 2 cloves garlic, minced
  • 0.5 cup uncooked barley
  • 3 cups vegetable broth
  • 1 (15.5 ounce) can white beans, drained
Instructions:
  • In a medium saucepan over medium heat, cook mushrooms, onion, celery, and garlic in oil until tender.
  • Combine barley and vegetable broth in a saucepan. Bring to a boil, cover, then lower the heat and simmer for 45 to 50 minutes until the barley is tender.
  • Fold the white beans into the barley mixture and cook for about 5 minutes until beans are warmed through.
