Vibrant barley and pine nut side dish bursting with flavor!
Ingredients:
  • 0.25 cup butter
  • 1 medium onion, diced
  • 1 cup uncooked pearl barley
  • 0.5 cup pine nuts
  • 2 green onions, thinly sliced
  • 0.5 cup sliced fresh mushrooms
  • 0.5 cup chopped fresh parsley
  • 0.125 teaspoon pepper
  • 2 (14.5 ounce) cans vegetable broth
Instructions:
  • Preheat your oven to 350°F (175°C).
  • In a skillet over medium-high heat, melt the butter. Add the onion, barley, and pine nuts, stirring until barley is lightly browned. Mix in green onions, mushrooms, and parsley. Season with salt and pepper. Transfer to a 2 quart casserole dish and stir in the vegetable broth.
  • Bake in the preheated oven for 1 hour and 15 minutes, until the liquid is absorbed and the barley is tender.
