Elevate your barley salad with gourmet pine nuts for an irresistible crunch.
Ingredients:
  • 220g pearl barley
  • 55g pine nut
  • 125.00 ml pitted kalamata olives, halved
  • 250g punnet cherry tomatoes, halved
  • 75g wild rocket
  • 100g feta, crumbled
  • 40.00 ml white wine vinegar
  • 42.00 gm lemon juice
  • 80ml olive oil
  • 62.50 ml finely sliced basil leaves
  • Salt, to season
Instructions:
  • In a saucepan, combine barley with 1.5L (6 cups) of boiling water and simmer until tender, about 25 minutes.
  • Give the ingredients a refreshing cold water bath and allow them to effortlessly shed excess water.
  • Combine all ingredients in a screw-top jar and shake vigorously to make the dressing.
  • Combine pine nuts, olives, tomatoes, and rocket with barley in a large bowl.
  • Drizzle dressing over the salad and mix well. Serve in bowls, sprinkle with feta cheese, and season generously with salt and freshly ground black pepper.
