Barlow's Blackened Catfish

Blackened catfish fillets coated in zesty Cajun seasoning, baked to Southern perfection.
Ingredients:
2teaspoons cayenne pepper
2teaspoons lemon pepper
2teaspoons garlic powder
2teaspoons salt
2teaspoons pepper
1poundcatfish fillets
2tablespoons butter
1cupItalian-style salad dressing
Instructions:
Preheat oven to 350 degrees F (175 degrees C) and lightly grease a medium baking dish.
Combine cayenne pepper, lemon pepper, garlic powder, salt, and pepper in a shallow bowl.
Coat catfish fillets in butter, then massage both sides with the cayenne pepper mixture.
Preheat a large heavy skillet over high heat until sizzling. Add the fillets and cook for about 2 minutes per side until a slight char develops.
Lay the blackened fillets in the baking dish in a single layer, then drizzle with Italian-style salad dressing. Bake in the preheated oven for 30-35 minutes until the fish flakes easily with a fork.
