Blackened catfish fillets coated in zesty Cajun seasoning, baked to Southern perfection.
Ingredients:
  • 2 teaspoons cayenne pepper
  • 2 teaspoons lemon pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons salt
  • 2 teaspoons pepper
  • 1 pound catfish fillets
  • 2 tablespoons butter
  • 1 cup Italian-style salad dressing
Instructions:
  • Preheat oven to 350 degrees F (175 degrees C) and lightly grease a medium baking dish.
  • Combine cayenne pepper, lemon pepper, garlic powder, salt, and pepper in a shallow bowl.
  • Coat catfish fillets in butter, then massage both sides with the cayenne pepper mixture.
  • Preheat a large heavy skillet over high heat until sizzling. Add the fillets and cook for about 2 minutes per side until a slight char develops.
  • Lay the blackened fillets in the baking dish in a single layer, then drizzle with Italian-style salad dressing. Bake in the preheated oven for 30-35 minutes until the fish flakes easily with a fork.
