Ingredients:
  • 4 Fresh Australian Ocean Barramundi Portions
  • 2 tsp vegetable or peanut oil
  • 1 tsp ground turmeric
  • 1/2 tsp dried chilli flakes (optional)
  • 280ml can coconut cream
  • 42.00 gm lime juice
  • 24.40 gm fish sauce
  • 16.00 gm brown sugar
  • 300g pkt Kale & Baby Spinach
  • 20g shredded coconut
Instructions:
  • In a large bowl, mix barramundi with oil, turmeric, and optional chili flakes. Season with salt and pepper. Heat a large frying pan over high heat. Cook barramundi skin-side down for 3 minutes, then flip and cook for 2 more minutes until cooked through. Place on a plate and cover with foil to keep warm before serving.
  • In a small bowl, mix together the coconut cream, lime juice, fish sauce, and sugar. Add kale and spinach to the frying pan, cook for 1 min. Pour in the coconut cream mixture and cook for 1-2 mins until the spinach wilts and the sauce thickens slightly.
  • Spoon the spinach mixture onto plates, then place barramundi on top before sprinkling with coconut to serve.
