Basic tomato sauce

Versatile sauce: freeze for months, refrigerate for a week. Enhances many dishes.
Ingredients:
  • 1 large clove of garlic
  • olive oil
  • 1 small dried red chilli
  • 2 teaspoons dried oregano
  • 3 x 400 g tins of quality Italian plum tomatoes
  • 1 tablespoon red wine vinegar
  • 1 handful of fresh basil or marjoram
  • extra virgin olive oil
Instructions:
  • Peel and finely chop the garlic, then sauté gently in 2 tablespoons of olive oil in a thick-bottomed pan. Add crumbled chili, oregano, and tomatoes. Stir gently to combine, being careful not to break the tomatoes. Simmer for 1 hour without breaking the tomatoes to achieve a sweet sauce. Add vinegar, chop up the tomatoes, and add basil or marjoram. Season with salt, pepper, and 2-3 tablespoons of extra virgin olive oil.
