Basic tomato sauce

Master Tobie Puttock's irresistible signature sauce for repeated delicious meals.
Ingredients:
  • 60ml (1/4 cup) extra virgin olive oil
  • 1 red onion, finely chopped
  • 3-4 garlic cloves, crushed
  • 40.00 ml chopped fresh thyme leaves
  • 3 x 400g cans cherry tomatoes or roma tomatoes
Instructions:
  • In a saucepan set over gentle heat, warm the oil. Next, sauté the onion and garlic, stirring occasionally, until softened, for about 8-10 minutes.
  • Sprinkle in fragrant thyme and stir for 2 minutes. Incorporate the tomato. Lower the heat and simmer gently for 30 minutes until thickened, stirring now and then. Finish with seasoning to taste.
