Savor Spain's essence in this delightful fish stew simmered with paprika, tomatoes, and white wine.
Ingredients:
  • 500g firm fish fillets, such as tuna or mahi-mahi, cut into bite sized chunks, seasoned, set aside
  • 1 can tomatoes, diced
  • 3-4 cloves garlic, sliced thinly
  • 27.30 gm olive oil
  • 5.00 gm paprika
  • 40.00 ml capers, rinsed
  • 125.00 gm white wine
  • 1 red onion, sliced thinly
  • 1/2 green capsicum, seeded and diced
  • 3-4 red potatoes, cubed
  • 1 bay leaf
  • Fresh parsley, chopped for garnish
  • Saffron
Instructions:
  • 1. In a large saucepan over medium heat, saute the onion and garlic in olive oil until soft. 2. Add all remaining ingredients except for the fish to the pan and cover with water. 3. Bring to a boil, then reduce heat, cover, and simmer for 25 minutes.
  • Add the fish and cook for an additional 4 minutes until done.
  • Garnish with fresh parsley and serve alongside warm crusty bread.
