Impressively layered German tree cake with a wood grain pattern, made on a grill for an easier process.
Ingredients:
220 g unsalted butter(at room temperature) plus extra for greasing
300 g golden marzipan
100 ml single cream
225 g sugar
10 large free-range eggs
½ tablespoonvanilla extract
1orange
150 g self-raising flour
100 g cornflour
300 g thin-cut marmalade
200 g dark chocolate (70%)
50 ml spiced run such as Sailor Jerry
25 g toastedflaked almonds
Instructions:
Preheat the grill to medium-high, then grease and line a 23cm springform cake tin. Mix marzipan and a bit of cream in a standing mixer until a thick paste forms. Slowly add the rest of the cream, then mix until pale. Add 170g butter and mix until combined. Add sugar and mix until creamy. Add egg yolks one at a time, then vanilla extract and orange zest. Sift self-raising flour and cornflour together, then gradually fold into the batter. Whisk the egg whites until stiff peaks form, then fold into the batter gently. Melt marmalade in a pan and keep warm. Ladle a thin layer of batter onto the cake tin base, spread evenly, and grill for 4 minutes until golden. Repeat layering, grilling, and glazing with marmalade until all batter is used, about 15-18 layers. Cool, chill, then glaze with melted chocolate mixed with rum. Top with toasted flaked almonds and let it cool completely before serving. Enjoy with tea or sherry. Store in a tin for up to 2 days.
