Spicy Jamaican marinated oxtail pressure-cooked to perfection until irresistibly tender.
Ingredients:
  • 3 pounds beef oxtail
  • 1 small onion, chopped
  • 2 bunches fresh thyme, chopped
  • 3 tablespoons browning sauce (such as Grace®)
  • 2 scallions, chopped
  • 3 tablespoons red pepper flakes
  • 2 tablespoons grated fresh ginger root
  • 1 tablespoon ground allspice
  • 3 cloves garlic, chopped
  • 2 bay leaves
  • 3 cups beef broth, divided
  • 1 cup water
  • 1 tablespoon tomato paste
  • 1 (15 ounce) can butter beans, drained and rinsed
  • salt and ground black pepper to taste
Instructions:
  • In a large bowl, mix together oxtail, onion, thyme, browning sauce, scallions, red pepper flakes, ginger, allspice, garlic, and bay leaves. Cover with plastic wrap and refrigerate for 8 hours to overnight for maximum flavor infusion.
  • Preheat pressure cooker over medium-high heat. Brown beef on all sides for about 10 minutes. Pour in 1 cup broth and water. Seal, lock, and set pressure regulator according to manufacturer's instructions. Simmer on low heat for approximately 2 1/2 hours until beef is mostly tender.
  • Combine the rest of the beef broth and tomato paste with the beef, cover tightly, and raise the heat to high. Let it steam and whistle for 7 to 10 minutes. Then, lower the heat and simmer until the oxtail is tender, about 40 minutes to 1 hour.
  • Allow pressure to release naturally as per manufacturer's guidance for 5 to 10 minutes. Unlock the lid and incorporate beans, salt, and pepper. Raise the heat to medium-high and cook for an additional 5 minutes until flavors blend perfectly.
