Bayy's Special Jamaican-Style Oxtail

Spicy Jamaican marinated oxtail pressure-cooked to perfection until irresistibly tender.
Ingredients:
3pounds beef oxtail
1 small onion, chopped
2bunchesfresh thyme, chopped
3tablespoons browning sauce (such as Grace®)
2scallions, chopped
3tablespoons red pepper flakes
2tablespoons gratedfresh ginger root
1tablespoonground allspice
3clovesgarlic, chopped
2bay leaves
3cups beef broth, divided
1cupwater
1tablespoontomato paste
1 (15 ounce) canbutter beans, drained and rinsed
salt and ground black pepper to taste
Instructions:
In a large bowl, mix together oxtail, onion, thyme, browning sauce, scallions, red pepper flakes, ginger, allspice, garlic, and bay leaves. Cover with plastic wrap and refrigerate for 8 hours to overnight for maximum flavor infusion.
Preheat pressure cooker over medium-high heat. Brown beef on all sides for about 10 minutes. Pour in 1 cup broth and water. Seal, lock, and set pressure regulator according to manufacturer's instructions. Simmer on low heat for approximately 2 1/2 hours until beef is mostly tender.
Combine the rest of the beef broth and tomato paste with the beef, cover tightly, and raise the heat to high. Let it steam and whistle for 7 to 10 minutes. Then, lower the heat and simmer until the oxtail is tender, about 40 minutes to 1 hour.
Allow pressure to release naturally as per manufacturer's guidance for 5 to 10 minutes. Unlock the lid and incorporate beans, salt, and pepper. Raise the heat to medium-high and cook for an additional 5 minutes until flavors blend perfectly.
