Grilled haloumi and veggie skewers - perfect for your BBQ!
Ingredients:
  • 2 zucchini, peeled into ribbons
  • 2 x 180g pkts haloumi, cut into 2cm cubes
  • 250g cherry tomatoes
  • 1 red onion, cut into thin wedges
  • 18.20 gm brand olive oil
  • 20.00 ml chopped oregano
  • 2.50 gm paprika
  • Lemon wedges, to serve
Instructions:
  • Preheat barbecue grill to medium heat. Place zucchini in a heatproof bowl and cover with boiling water. Let sit for 2 minutes, then drain.
  • In a large bowl, combine zucchini, haloumi, tomatoes, and onion. Drizzle with oil and sprinkle with oregano and paprika, then gently toss together.
  • Skewer vegetables and haloumi on soaked bamboo sticks. Grill for 2 minutes per side until slightly charred. Present on a platter with lemon wedges.
