BBQ haloumi and vegetable kebabs

Try these irresistible haloumi and veggie kebabs for your next BBQ!
Ingredients:
  • 2 zucchini, peeled into ribbons
  • 2 x 180g pkts haloumi, cut into 2cm cubes
  • 250g cherry tomatoes
  • 1 red onion, cut into thin wedges
  • 18.20 gm brand olive oil
  • 20.00 ml chopped oregano
  • 2.50 gm paprika
  • Lemon wedges, to serve
Instructions:
  • Preheat the barbecue grill to medium heat. Place the zucchini in a heatproof bowl and cover with boiling water. Let it sit for 2 minutes, then drain.
  • Combine zucchini, haloumi, tomatoes, and onion in a large bowl. Drizzle with oil and sprinkle with oregano and paprika, then gently toss to mix.
  • Skewer vegetables and haloumi onto soaked bamboo skewers. Grill for 2 minutes on each side until slightly charred. Serve on a platter with lemon wedges.
