BBQ haloumi with strawberry salsa

Grilled haloumi topped with minty strawberry salsa - perfect for spring gatherings!
Ingredients:
  • 250g strawberries, finely chopped
  • 1/2 small red onion, finely chopped
  • 42.00 gm lime juice
  • 14.40 gm honey
  • 62.50 ml coarsely chopped coriander
  • 40.00 ml finely shredded mint
  • 1 red birdseye chilli, seeded, finely chopped (optional)
  • 27.30 gm olive oil
  • 2 x 250g pkts haloumi, cut into 5mm-thick slices
Instructions:
  • In a medium bowl, mix together the strawberries, onions, lime juice, honey, coriander, mint, and chili (if using), along with 1 tablespoon of oil. Season with salt and pepper to taste.
  • Preheat a barbecue grill or chargrill on high heat. Brush the haloumi lightly with the remaining oil. Grill in batches for 1 minute on each side until nicely charred. Transfer the grilled haloumi to a serving platter and top it with the strawberry mixture. Serve immediately.
